Longer Shelf Life for High Quality Risotto Rice

Power Imports & Distribution is adding Riso della Scala to its product lines in early August 2008 bringing food service businesses and the end consumer high quality, fresh tasting vialone nano, carnaroli and arborio rice.
While maintaining the tasteful Italian paper outer packaging, superior freshness is achieved using the atmosphere packaging method, a process which lengthens the product preservation time, even after the package has been opened. Without the use of preservatives or additives, the twenty-four month shelf life is attained using a mixture of azote and carbon dioxide which eliminates humidity and therefore inhibits the possibility of bacterial development which the standard vacuum system cannot guarantee. The rice is not “stressed” by machine processes involved in vacuum packing and therefore Riso della Scala ensures that there is less than 1.5% breakage of rice grains and no alteration in colour.
