Power Imports & Distribution is the exclusive importer of the Riso della Scala brand of risotto rice into Australia. The line consists of three varieties:
Vialone Nano
This is the traditional risotto rice of the Veneto region in Italy. It is of a high quality, absorbing flavours effectively during the cooking process and offers a high yield on the plate. The structure of the grains ensures the rice holds its shape extremely well upon cooking, giving it a firm bite. The rice is grown within the IGP (Indicazione Geografica Protetta) region of Veneto meaning that the standards of the rice are monitored, protected and revolve around methods of cultivation and the geographic area from which they originate. The product line therefore offers the consumer a high and consistent quality of rice. Perfect with chicken or earthy ingredients such as porcini, pumpkin and sage.
Carnaroli
Highly prized in Italy for its ability to maintain its shape and absorb flavours during cooking, carnaroli has a creamier finish lending itself perfectly to be matched with ingredients such as seafood and saffron.
Arborio
The most well known and widely used risotto rice in Italy, the large grains of the Arborio rice variety cook uniformly while maintaining a pleasantly chewy centre.
The History Behind the Name
The “della Scala” family or “Scaligera” family ruled over the city of Verona for one hundred twenty five years, from 1262 to 1387.
The birth of Cangrande della Scala, the third son, was preceded by his mother’s premonition, in which her son roused the world with might. From a young age, Cangrande proved himself as a resolute man and entered the world of politics. Aside from being a charismatic politician he was also patron of Verona, receiving artists and poets, including Dante, at his court.
At the “Scaligera Table” women personally served guests, delicately taking with their thumb, index and middle fingers (it was considered discourteous to use the other fingers), pieces of wild meats, flavoured with lots of spices and cooked in the oven or on a spit. The “good kitchen of Verona” is considered an ancient and glorious tradition which achieved fame for the splendour and hospitality of such luxurious, yet convivial dining.
Today this tradition is entrusted to local restaurants and trattorie, with dishes such as boiled beef with the "pearà", “risotto alla pilota", "paparele" (noodles) with peas or beans, "bigoli" (spaghetti) with sardines and "pastisada de caval”.
As a tribute to this tradition of good food, Riso della Scala was chosen as the label for premium quality rice worthy of association with the Veronese culinary art which has been handed down from generation to generation – a tradition which allows us to enjoy ancient recipes which are now recognised internationally.
